Tips for making the Parmesan Chicken Pasta
Tip 1: Sear the Chicken well
What makes this chicken parmesan pasta dish so delicious is the pan sauce from the chicken. The trick to cooking the chicken is to start with a hot skillet (medium-high heat). When you add the chicken to the skillet, it should hear the chicken sizzle. If you don’t hear the chicken sizzle, then you know the pan is not hot enough. Let the pan heat up more before adding the chicken. Then cook the chicken until it has a golden brown sear.
Tip 2: Don’t wash the chicken pan
When you cook the chicken broth, make sure you use the same chicken skillet that you cooked the chicken in. Don’t wash the chicken pan! You need the chicken flavor to make the pasta sauce. This is what makes it delicious.
Tip 3: Don’t cook the Pasta too early
Don’t cook the pasta too early, it will not come out al dente! I suggest you cook the pasta towards the end. Start cooking the pasta after you brown the chicken. That way, your pasta will be al dente.

Parmesan Chicken Pasta
Ingredients
- 1 lb Chicken tenders
- 16 oz Penne Pasta (uncooked)
- 1/4 cup Pamesan Cheese
- 1/4 cup Sour Cream
- 1 Tbsp Butter
- 16 oz Chicken Broth
Chicken Coating Mix
- 3 Tbsp Flour
- 2 Tbsp Corn Starch
- 1/2 tsp Garlic Powder
- 1/2 tsp Poultry Seasoning
- 1/2 tsp White Pepper
- 2 tsp Salt
- 1/2 tsp Black Pepper
Instructions
Chicken Coating Mix
- Add Flour, Corn Starch, Garlic Powder, Poultry Seasoning, White Pepper, Salt and Black Pepper into a bowl and then mix
- Slice Chicken tenders into bite size
- Toss Chicken in the chicken coating mix
Chicken Pasta Sauce
- Add olive oil to a pan on medium high heat
- Add chicken to the pan. Make sure you add the chicken when the pan is hot enought. You should hear a sizzle when you add the chicken. If not, it's too early to cook the chicken, let the pan heat up some more. Cook the chicken until it has developed brown bits.
- Transfer the cooked chicken to a plate
- Add chicken broth to the same pan that you cooked the chicken in
- Bring the chicken broth to a simmer
- Add the chicken into the broth
- Bring the chicken and chicken broth to a simmer
- Add sour cream
- Add butter
- Add Parmesan Cheese
- Cook the chicken until it look creamy
Pasta
- Bring a large pot of salted water to a boil over medium-high heat
- Add penne pasta and cook until al dente according to package directions, about 8-10 minutes
- Drain the pasta and add the pasta to the skillet with the chicken pasta sauce. Mix well until the penne pasta is well coated with pasta sauce.
- Serve and enjoy immediately while it's al dente! Add more parmesan cheese if desired.
